【摘要】:Themaximumenergyinputratetestisusedtoconfirmthatthesteamcookerisoperatingatthemanufacturerrsquo;ratedinput.Thistestwouldalsoindicateanyproblemswiththeelectricpowersupply,gasservicepressure,orsteamsupplyfloworpressure.Preheatenergyanddurationcanbeusefultofoodserviceoperatorsformanagingpowerdemandsandknowinghowquicklythesteamcookercanbereadyforoperation.Idleenergyrateandpilotenergyratecanbeusedtoestimateenergyconsumption.Greenpealoadcookingenergyefficiencyisanindicatorofsteamcookerenergyperformancewhencookingfrozenproductsundervariousloadingconditions.Thisallowsthefoodserviceoperatortoconsiderenergycostswhenselectingasteamcooker.Potatoloadcookingenergyefficiencyisanindicatorofsteamcookerenergyperformancewhencookingfoodsthatrequirelongcooktimes(forexample,potatoes,beans,rice,lasagnaorcasserolerethermalization).Thetestdemonstratesthedifferenceinenergyefficiencybetweenpressureandpressurelesssteamcookersforthistypeofcookingevent.Theinformationmayhelpafoodserviceoperatortoevaluatewhattypeofsteamertoselect(pressureversuspressurelessversusdualpressuremode)fromanenergyperformanceperspective.Greenpealoadproductioncapacityandpotatoloadproductioncapacitycanbeusedbyfoodserviceoperatorstochooseasteamcookertomatchtheirparticularfoodoutputrequirements.Waterconsumptioncharacterizationisusefulforestimatingwaterandseweragecostsassociatedwithapplianceoperation.Condensatetemperaturemeasurementisusefultoverifythatthetemperaturedoesnotexceedregionalbuildingcodelimits.Cookinguniformityprovidesinformationregardingthesteamerx2019;sabilitytocookfoodatthesameratethroughoutthesteamerx2019;scompartment.1.1Thesetestmethodsevaluatetheenergyconsumptionandcookingperformanceofsteamcookers.Thefoodserviceoperatorcanusethisevaluationtoselectasteamcookerandunderstanditsenergyconsumption.1.2Thesetestmethodsareapplicabletothefollowingsteamcookers:high-pressure,low-pressure,andpressurelesssteamcookers(SpecificationF1217GradesA,B,andC);convectionandnon-convectionsteamcookers;steamcookerswithself-containedgas-fired,electric,orsteamcoilsteamgenerators,andthoseconnecteddirectlytoanexternalpotablesteamsource(SpecificationF1217Stylesi,ii,iii,andiv).Thesteamcookerswillbetestedforthefollowing(whereapplicable):1.2.1Maximumenergyinputrate(see10.2).1.2.2Preheatenergyconsumptionandduration(see10.3).1.2.3Idleenergyrate(see10.4).1.2.4Pilotenergyrate(see10.5).1.2.5Frozengreenpealoadcookingenergyefficiency(see10.7).1.2.6Frozengreenpealoadproductioncapacity(see10.7).1.2.7Wholepotatoloadcookingenergyefficiency(see10.9).1.2.8Wholepotatoloadproductioncapacity(see10.9).1.2.9Waterconsumption(see10.7and10.9).1.2.10Condensatetemperature(see10.7and10.9).1.2.11Cookinguniformity(see10.10).1.3Thevaluesstatedininch-poundunitsaretoberegardedasstandard.TheSIunitsgiveninparenthesesareforinformationonly.1.4Thisstandardmayinvolvehazardousmaterials,operations,andequipment.Itdoesnotaddressallofthesafetyconcerns,ifany,associatedwithitsuse.Itistheresponsibilityoftheuserofthisstandardtoestablishappropriatesafetyandhealthpracticesanddeterminetheapplicabilityofregulatorylimitationspriortouse.
