【摘要】:ThisInternationalStandardspecifiesaroutinegasliquidchromatographicmethodforthedeterminationofthesterolcompositioninanhydrousmilkfatextractedfromdairyproductsdirectlyontheunsaponifiablematter,ThefirstgoalofthisInternationalStandardisthequantitativeevaluationofcholesterol,whichrepresentsabout98%ofthesterolfractionofpuremilkfat.Moreover,inthecaseofanalysisofmilkfatinamixtureofvegetablefats,thespecifiedprocedureallowstheevaluationofthemostimportantphytosterols.Theprocedurehasbeenvalidatedonmilkfatsamplescontainingapproximately28%to32%ofvegetablefat.Duetotheabsenceofthepurificationstep,whichallowsthecompleteremovalofinterferingcompoundsfromtheunsaponifiablematter,particularcareshouldbetakenwhenapplyingthismethodtotheverificationofthepurityofmilkfatofunknownorigin.Inthecaseofsuspiciousresults,thereferencemethoddescribedinISO12078?IDF159canbeused.
